Pasta                                             Egg              1 red chilli

Creme Fraiche                       hard Parmesan type cheese           spinach

Black pepper to season

Cook pasta al–dente and drain, put back in pan.

In a separate bowl,  mix together 1.5 tablespoons crème fraiche, 1 egg and  a good handful (or 2 tablespoons) of grated hard Parmesan type cheese. Add 2 handfuls of wilted spinach (make this by putting spinach  in a pan until water has gone) and some cut chilli (to taste). Add lots of cracked black pepper.

Stir this into the pasta (while in pan). Serve.
