Who doesn’t need a chocolate fix every now and again? This was a simple, quick and tasty way to get it. Just put your ingredients together throw it in the microwave and presto!!! It’s not as tasty as the vegan oatmeal chocolate chip cookieshttp://www.multipleexperiences.org/2017/04/08/vegan-oatmeal-chocolate-chip-cookies/ , but this from start to finish took 10 minutes. Can’t beat that to get a nice vegan dessert. My little notes are in bold. Chocolate Mug Cake
4 tablespoons white whole wheat flour used whole wheat baking flour
2 tablespoons brown sugar packed the brown sugar in
2 tablespoons unsweetened cocoa powder
¼ teaspoon baking powder
3 tablespoons plant-based milk
¼-½ cup unsweetened applesauce
1-2 drops vanilla extract
1 dash cinnamon
2-3 tablespoons vegan chocolate chips used more like 5-6 tablespoons
Whisk flour, sugar, cocoa, baking powder, and cinnamon together in a small bowl. Set aside. For a really sweet cake, add more sugar to taste.
Whisk ¼ cup applesauce, nondairy milk, and a drop or two of vanilla extract together in another small bowl.
Pour wet mixture into dry mixture and then add chocolate chips. Stir well to combine.
Add another 1 to 2 tablespoons of applesauce, until the batter is wet and resembles regular cake batter.
Pour batter into a coffee cup, and microwave for three minutes. If your microwave is weaker or stronger, adjust accordingly.
